The dishes we’ve chosen to exemplify these techniques are grilled mullet marinated in traditional spices, served with tangy red onion chutney; king prawn moilee with stir-fried cabbage Thoran; and tamarind-spiced rice. You’ll learn the fundamentals of a South Indian curry, the art of tempering spices (‘tadka’), how to cook with coconut, and a foolproof method for cooking rice, to name just a few examples.
